    Fried Freekeh & Spinach Cakes feat Quinoa
This was all I had left in my kitchen so I went for it. Made about 40 of them too by accident. Turned out pretty dang good. 

1 cup mixed quinoa & freekeh (cook as directed and let cool)
1 big handful of Spinach roughly chopped
A few drizzles of olive oil
3 large eggs
1 big handful of organic bread crumbs (trader joes)
Salt & Pepper

Mix all of this in a large bowl when the quinoa and freekeh have cooled down. In a large frying pan throw in some veg oil and let heat up. (use any oil you prefer to fry with, this was all I had.) Make little balls with your hands and place them in the hot oil and press them down with a spatula. Let them get nice and brown and crispy on each side before flipping. Be careful not to splash yourself with the hot oil, I do that a lot. This is how I created these with what I had in my kitchen. Feel free to add, subtract or create whatever. I hope this was some-what inspiring. 

Freekeh - A wheat grain that has been roasted and sun-dried giving it sort of a blugur look and feel with more of a nutty taste. It’s good and it was my first time using it for anything. 
Quinoa - An edible seed that comes from a grain crop. Very high in protein. Good stuff and can be thrown into just about anything. I always have some on hand.
